Long term a good use case for NFT technology would have been government issued ID.

I recently had to dig out paperwork going back to 1958 for my sons passport application including grandparents birth and marriage certificates. This then needed posting (at great personal risk even with tracked postage) and returning which took weeks.

Had this all existed on some government backed blockchain it would have taken 5 minutes to process and could also be done with a zero knowledge exchange.
