The best part about any RPG is the story you organically create with the other players that you end up retelling years down the line. A good ruleset will allow a GM to tailor creative solutions to problems from players without the rules getting in the way.

In my opinion the simpler the better in this case. It doesn't matter how many skills and body parts you can damage if the story the GM has created is terrible.

The best game I ever played along these lines was Games Workshop's 1995 classic Warhammer Quest. It had a dungeon deck system for GM-less play but an in-depth roleplay element with travelling to settlements, unique locations for extra character packs and a lot of room for customisation. My dad used to GM for me and my friends and we had a great time.
