The iPhone has for many years been the 'vanilla' smartphone, a reliable-but-unexciting sidekick for the modern world.

I don't think that Apple need to change at all though. Rather the audience needs to grow up and realise that tech news is not a form of entertainment and that laptops and phones have become commodities and are about as exciting as washing machines.
