The only real reasons I would say to get the iPad Pro over the Air are ProMotion and the camera array. There is little processing difference.

One thing never explored is the bountiful 2nd hand Apple marketplace. Their devices are well made and often last years-to-decades beyond competitor models.

I would say that getting a good deal on an M1 iPad Pro is probably the best idea.
